Unique “Cajun Jack’s” Debuts In Elizabeth

A growing Village of Elizabeth has just added a totally unique new Restaurant/Attraction to its list of destination “must sees”.

Cajun Jack’s is open for business and there is nothing else like it in Jo Daviess County, or for that matter, in all of Northwestern Illinois, and maybe the entire state.

From the Gulf & Cajun Country comes the traditional Seafood Gumbo by cup or bowl, Crab & Shrimp Etouffee, with the restaurant’s secret Creole recipes, mushroom caps stuffed with seafood in its signature Creole Sauce, and Alligator Tots, an early hit with customers.

Po’ Boy sandwiches, lots of oyster and shrimp dishes, and a wide variety of Seafood Baskets served with Coleslaw, Hush Puppies and Fries also are on the Cajun side of the menu.

But there’s more. Rib-eye Steak Dinners, Mexican Quesadillas, Tacos and Chimichangas, Burgers and Sandwiches, and Pasta & Salads make sure there is something for every taste.

And dessert? They’re working on turnovers and fried Twinkies.

Located on Illinois 20, on the west of side of Elizabeth, Cajun Jack’s has been brought to us by owner Jacky Mills Jacobs, a native of Savanna, after serving as Manager of her Uncle Jack Mills’ famous “Fat Jack’s” in Texarkana for 13 years.

And yes, she brought Michael Sellers, her Chef, with her, and daughter Katie Herrig as Manager. Besides working at the Texarkana location, Katie earlier was on staff at Fried Green Tomatoes.

Owner Jacky is proud of their cooking too.

“Everything is hand battered and cooked to order,” she says. “Our wait staff is local and very friendly. We do parties and lunches, and will have bands outside sooner rather than later.”

“But don’t ask for our Cajun recipes. That’s our secret!”

“Cajun Jack’s is the latest in our efforts to ‘Grow Elizabeth,’” says Mayor Mike Dittmar. “And we have two more business attractions opening soon. There’s more to come.”
